Christmas Goodies 6 Recipes – Sweets & Appetizers – Printable
I just love baking and making candy and goodies at Christmas! I’m trying to find some different things.
Eggnog Cheesecake
Egg Nog Cheesecake
Ingredients
- 1 Cup very finely ground cashews
- 1 cup finely crushed graham crackers (14 squares)
- 1/2 cup sugar
- 1/2 cup butter, melted
- 4 8 ounce package cream cheese, softened
- 1 cup sugar
- 1 tablespoon rum (optional)
- 1 teaspoon vanilla
- 1/2 teaspoon ground nutmeg
- 3 eggs
- 1 1/2 cups dairy eggnog
- Cashew brittle (optional)
Directions
- For the cheesecake crust:
- 1. In a medium bowl, stir together the ground cashews, graham crackers, and the 1/2 cup sugar. Drizzle the melted butter over the cashew mixture. Toss until mixed well. Press the cashew mixture onto the bottom and about 1-1/2 inches up the sides of a 10-inch springform pan. Wrap outside of the springform pan securely with heavy foil. Set aside.
- For filling:
- 1. In a large mixing bowl, beat cream cheese with electric mixer on medium-high speed 3 to 4 minutes or until light and fluffy.
- Gradually beat in 1 cup sugar, beating for 2 to 3 minutes or until mixture is completely smooth, scraping sides of bowl. Reduce speed to medium, beat in rum (if you like), vanilla, and nutmeg. Add eggs all at once; beat on low speed until just combined. Stir in eggnog.
- 2. Pour filling into crust-lined pan. Place springform pan in a large roasting pan. (Make sure theres at least 1 inch between the springform pan and the edges of the roasting pan.)
- Place roasting pan on oven rack. Carefully pour enough hot tap water into roasting pan to come halfway up side of springform pan.
- 3. Bake in 350 degree F oven 60 to 70 minutes or until edge of cheesecake is firm and center appears nearly set when lightly shaken.
- Carefully remove pan from water bath, transfer to a wire rack. Cool 15 minutes. Remove foil. Loosen crust from sides and cool 30 minutes.
- Remove sides of pan; cool. Cover with plastic wrap and refrigerate up to 2 days. Garnish with cashew brittle, if you like.
- Variation
- To bake without the water bath: Prepare cheesecake as above, except omit the foil; place the pan with filling in a shallow roasting pan. Bake without water bath 45 to 50 minutes or until center appears nearly set when shaken. Surface will have a more golden color than cheesecake baked in a water bath.
Fruit Dip – Delicious and So Easy
This just take an 8 oz. Cream Cheese, Softened and 7 oz. Marshmellow Cream
Just blend these with a mixer and you’re done!
Appetizer – Brown Sugar Smokies
Kaluha Cake Bites
Kaluha Cake Bites
Ingredients
- 1 package devil\'s food cake mix
- 1 cup water
- 1/3 cup vegetable oil
- 3 eggs
- 1 cup ready-made dark chocolate frosting
- 1 cup Kahlua
- 6 ounces chocolate disks for melting
- Optional:
- 2 ounces white chocolate disks for melting
Directions
- Prepare the cake mix according to package directions. Allow cake to cool for one hour.
- Crumble cake into a large bowl. Mix in Kahlua.
- Add frosting and stir until combined. Mixture will be sticky.
- Cover and refrigerate 2 hours or overnight.
- Line a baking sheet with waxed paper.
- Use a melon baller to form 2 inch bites; place on waxed paper.
- Freeze bites for one hour or until firm enough to coat
- Using a skewer, pick up bites one at a time and dip into melted chocolate.
- Use another skewer to slide bite onto the lined cookie sheet. Allow bites to set in refrigerator.
- Optional: After bites have set, use a pastry bag fitted with a #3 tip to drizzle melted white chocolate.
Jalapeno Popper Spread
Jalapeno Popper Spread
Ingredients
- 2 (8 ounce) packages cream cheese, softened
- 1 cup mayonnaise
- 1 (4 ounce) can chopped green chilies, drained
- 2 ounces canned diced jalapeno peppers, drained
- 1 cup grated Parmesan cheese
Directions
- Stir together cream cheese and mayonnaise in a large bowl until smooth.
- Stir in green chiles and jalapeno peppers.
- Pour mixture into a microwave safe serving dish, and sprinkle with Parmesan cheese.
- Microwave on High until hot, about 3 minutes.
- Baked Variation
- If you would like to brown the cheese, bake at 375 degrees F (190 degrees C) for about 30 minutes.
Serve with totilla chips or crackers
