#Left-Over Turkey Recipe – Nachos
A few sliced jalapeno peppers would go nicely on the top, if you like a little heat!
Left-Over Turkey Nachos
Ingredients
- Turkey, shredded, about 1/2-1 pound
- Refried beans with Spicy Chipotle
- 1/2 cup sliced onion
- 1/2 cup sliced bell pepper (try to use various colors for a little flair)
- Olive oil
- Bag of nacho chips
- Shredded cheddar cheese
- Shredded mozzarella cheese
- Finely chopped green onions for garnish
- Salsa
- Sour Cream
Directions
- Lightly saute the sliced onions and bell peppers in olive oil, not very soft
- Place a pile of nacho chips on a large cookie sheet.
- Layer the refried beans, onions, peppers and shredded smoked turkey over the nachos.
- Then spread a layer of shredded cheddar cheese and a layer of shredded mozzarella cheese.
- A few sliced jalapeno peppers would go nicely on the top, if you like a little heat!
- Place in the oven for about 10 Mins. at 350
- Serve with Salsa and Sour Cream (optional)
