3 Chicken Wing Sauces For Game Day
Take your pick of all these sauces for your wings!
Sweet & Hot Chicken Wings with Cherry Barbecue Glaze
Ingredients
- 3 1/2 pound(s) chicken wings, tips discarded and wings split
- 2 tablespoon(s) unsalted butter
- 1/2 medium sweet onion, such as Vidalia, finely chopped
- 1 large habanero chile, seeded and minced
- 3/4 cup(s) cherry preserves, preferably sour cherry
- 1/3 cup(s) lime juice, freshly squeezed
- Salt, to taste
- Freshly ground black pepper, to taste
Directions
- In a medium saucepan, melt the butter.
- Add the chopped sweet onion and cook over moderate heat, stirring occasionally, until the onion is softened and lightly browned, about 5 minutes.
- Add 3/4 of the minced habanero chile and cook for 1 minute, just until softened.
- Scrape the onion and habanero into a blender, add the cherry preserves and lime juice, and purée until smooth.

- Return the cherry glaze to the saucepan and bring it to a boil over moderately high heat.
- Stir in the remaining minced habanero chile and season the glaze with salt and black pepper.
- Transfer the glaze to a small bowl.
- Light a grill or preheat a broiler and position a rack 8 inches from the heat source.
- Season the chicken wings all over with salt and black pepper and grill over moderately high heat, turning occasionally, until lightly charred and crispy, about 20 minutes.
- Alternatively, broil the wings for about 20 minutes, turning occasionally, until they are crispy.
- Transfer the chicken wings to a large bowl and toss with 1/3 of the cherry glaze.
- Return the wings to the grill or broiler and cook, turning once, just until sticky and caramelized, about 2 minutes.
- Return the chicken wings to the bowl and toss with another 1/3 of the cherry glaze.
- Transfer the glazed chicken wings to a serving platter and serve with the remaining glaze on the side.

Ginger-Honey Hot Wings
Cooks in Serves 2 - 4
Ingredients
- 2 lbs. chicken wingettes and/or drumettes
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1 teaspoon ground Sichuan peppercorns
- 1/4 teaspoon five-spice powder
- 2 1/2 tablespoons red hot sauce, preferably Frank\'s
- 2 tablespoons unsalted butter, melted
- 1/2 tablespoon soy sauce
- 2 tablespoons honey
- 2 tablespoons minced fresh ginger
- 2 tablespoons scallions, white and light green parts only, thinly sliced
Directions
- Preheat the oven to 500 degrees F.
- Line a large baking sheet with foil and spray with vegetable oil.
- In a bowl, mix the flour with the salt, Sichuan peppercorns, and five-spice powder.
- Add the chicken and toss to coat.
- Spread the chicken on the baking sheet in a single layer and spray with vegetable oil.
- Roast the chicken for 45 minutes, turning once or twice, until browned and crispy.
- In a bowl, whisk the hot sauce with the butter, soy sauce, honey, and ginger until combined.
- Add the chicken wings to the sauce and toss.
- Sprinkle with the scallions and serve.

Mango-Curry Hot Wings

Ingredients
- 2 lbs. chicken wings
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 2 teaspoons hot Madras curry powder
- 2 1/2 tablespoons red hot sauce, preferably Frank\'s
- 2 tablespoons unsalted butter, melted
- 2 tablespoons Major Grey Chutney
- Chopped pistachios
Directions
- Preheat the oven to 500 degrees F.
- Line a large baking sheet with foil and spray with vegetable oil.
- In a bowl, mix the flour with the salt and curry powder.
- Add the chicken and toss to coat.
- Spread the chicken on the baking sheet in a single layer and spray with vegetable oil.
- Roast the chicken for 45 minutes, turning once or twice, until browned and crispy.
- In a bowl, whisk the hot sauce with the butter and chutney.
- Add the chicken wings and toss. Sprinkle with the chopped pistachios and serve.

I’m never allowed to make wings for the Super Bowl. The men say I must buy them. However, I think if I sneak these in I might be allowed to make them next year. They love them hot and the ones with the habanero chiles may just knock their socks off. Thanks for sharing at Saturday Dishes.
