How To Make Beef Broth and Vegetable Soup
Making your own beef broth for vegetable soup or anything else really, is so much better than the canned kind.
My mother, the best cook I’ve ever known, taught me how to make my own broth. She was such a great cook. She’d say stuff like “just a hand full” or “just a couple shakes” when telling me a recipe. She cooked so much, she didn’t need to measure anything.
So to make your own broth, start off with a good roast and use about a teaspoon of butter. Just let the butter melt and place the roast in your pan. (I use a large pot for this). Brown the meat on both sides after applying your spices, you use. I use salt, pepper, garlic and a little Italian spice.
After both sides are browned, add about 1/2 Cup of water and cook on medium heat. Let the water cook off completely. You have to watch it, so it doesn’t burn. Then add another 1/2 cup, do the same thing, leaving a little water this time. Scrap the bottom of the pan some.
Then add 1 cup of water and let it cook for a while. No lid on this. Then when it gets so it needs more water I go ahead and add about 1 1/2 cups. Put a lid on the pan and let it cook for at least an hour.
Then you should have some good broth going. This is when I put it in a crockpot. For vegetable soup, I use 2 cans of Stewed Tomatoes, completely chopped up. And some water to cover the meat and more. I use frozen vegetables. And I cut up my own potatoes. Then you just let it cook all day in the crockpot.
