How To Make Easter Basket Cupcakes With A Creamy Center
These have the best creamy center I’ve ever tasted!
For the frosting I used a Cream Cheese Buttercream recipe
I learned how to decorate the cupcake like grass. Then figured out a way to make a handle. Hope you like them!
So the first thing is, you just bake the cupcakes with a box mix. Or homemade, of course. I used coconut. I’m crazy about that taste!
Then after they cool, you get a bit of the center out of each one. I used an apple corer.
Just push it down the middle and turn once.
The next thing is to make the filling. (Recipe below.) Then you just pipe it into the middle of each cupcake. Here’s how I fill my piping bag:
The creamy center is to die for! I was eating it plain! (I had a little left over)
Next, on to the frosting. I’ve started using the Wilton Coloring and I can’t tell you how much better it is. I only used like 1/8th of a teaspoon for this bowl of frosting. And the colors are so much more bold and pretty.
I put the frosting onto some cling wrap and twist. Then place that in the piping bag.
To ice the cupcakes as grass, use the Wilton tip #233. Just start in the middle of the cupcake and bring it down each side. Break it off and go back to the middle again.
For the handle I used Tangy Zangy Sour Twist Sticks. They hold up the best. And just push it down on each side. Then of course, use whatever candy you’d like.

Easter Basket Cupcakes with a Delicious Creamy Center

Ingredients
- Cake Mix of your choice
- Eggs (Per box directions)
- Oil or Apple Sauce (I use Apple Sauce)
- Water
- For Filling:
- 8 oz. Cream Cheese
- 1 Small Jar Marshmellow Cream
- 1 teasp Vanilla
- Frosting:
- 8 oz. Cream Cheese
- 2 Sticks Unsalted butter
- 1 teasp Vanilla
- 4-4½ C Powdered Sugar
- Tangy Zangy Sour Fruit Twist Sticks
- Easter Candy
Instructions
- Bake cupcakes per box instructions.
- Cool completely and take out the center ( with apple corer)
- Mix the filling ingredients with mixer, all at once
- Then fill your cupcakes using a piping bag or baggie, cutting off a small tip
- For the Frosting:
- Cream the butter and cream cheese and vanilla with mixer
- Add Powdered Sugar a little at a time
- Place in piping bag
- Using the #233 Tip, Pipe the icing on
- Place Easter candy on top
- Place the handle down in, on each side
- ENJOY!
