Brownie Reese’s Ice Cream Cake #Recipe
This is easy to make and very good!
You can use my brownie recipe or a brownie mix. Also, you can use Cool Whip in place of the whipped cream I used.

I made this for my son’s 16th birthday! It’s his favorite ingredients. He liked it really well. He ate a few piecies throughtout the day. Actually, we all liked it. It was gone by the middle of the next day. For us, that’s really quick. So, I can honestly say, it was delicious!

Author: Mom 'N Daughter Savings
Recipe type: Dessert
Serves: 12
Ingredients
- 4 Eggs
- 1 Cup Sugar
- 1 Cup Brown Sugar
- ½ Cup Melted Butter
- 1¼ Cups Cocoa - Unsweetened
- 2 teasp Vanilla
- ½ Cup Flour
- ½ teasp Salt
Instructions
- Preheat oven to 350
- Grease and flour 8" pan (I used the round one)
- Beat eggs at medium speed until light and fluffy
- Add both sugars.
- Add remaining ingredients and mix until all are combined well
- Pour into pan and bake for 25-30 minutes.
- Insert toothpick in middle, if it comes out clean, they're done.
Make sure you let the brownies cool completely before taking them out of the pan. You can put parchment paper in the bottom, instead of greasing the pan. That way it’s easier to take them out.
Obviously, you make two pans of this. One for the top and one for the bottom.
And just put ice cream in the middle. I spooned it out and spread it, best I could.
Place it right back in the freezer so the ice cream doesn’t melt.
For the topping I used real whipped cream. Just beat it in your mixer until it’s almost done with stiff peaks, then add one cup of sugar and mix just a little bit longer. Cool Whip would also work. We just love real whipped cream.
Then I put some miniature Reese’s Peanut Butter cups on the top and bottom.
ENJOY!
