Garlic Parmesan Chicken with Gluten-Free Pasta
This recipe is different from any other Garlic Chicken one.
I made it with what I already had in the pantry. And it turned out delicious!
I had some chicken and Gluten-Free pasta and I wanted to figure out a recipe. So I started looking around my fridge and pantry and just started cooking.
First I boiled about 2 lbs. of chicken strips with some Chipotle Seasoning. And started boiling the Gluten Free Pasta. I’m just starting to go Gluten-Free. I have some stomach problems and my symptoms seem to match the Gluten Sensitive ones.

This is my own made-up Chicken, Gluten-free Recipe. It turned out really good so I thought I should share it.

Ingredients
- 2 lbs. Chicken (Strips or Breasts)
- 12 oz. Gluten-Free Pasta
- 2 Tablesp Minced Garlic
- 1 Tablesp Olive Oil
- Chipotle Seasoning
- 4 oz. Cream Cheese (low fat)
- 1½ Cups Beef Broth (Yes beef)
- 1 Cup Almond Milk
- 5 oz. Shredded Parmesan
- 8 oz. Shredded Mozerella
- ½ Bag Frozen Broccoli (Or more if you want)
Instructions
- First boil the chicken for 15-20 mins.
- And boil the pasta about 12 mins
- Pre-Heat Oven to 350
- Drain both, add cream cheese to pasta.
- Spinkle on some Chipotle and Cut up the chicken.
- Put the Olive Oil in a skillet
- And brown the minced garlic.
- Add the chicken, then the broth to skillet for just a few mins.
- Spoon some chicken mixture into a baking dish, then some broccoli, top with some of both cheeses, pour on ½ C Milk.
- Then spoon the rest of each in.
- Make sure to have cheeses on top. Pour on ½ C Milk
- Bake on 350 about 20 mins.
This recipe is one I completely made up myself. So I really hope you like it. If you have any good tweaks for it, let me know. I’d love to try it.
