Blue Velvet Cake Recipe
Red is the most popular, but this is great. I just love this blue velvet cake!
Actually, I love them both! The taste is unique and just sweet enough.
I’m trying to get healthy recipes and go gluten-free. But I don’t know how to cut out gluten completely. For one thing, most of that is a lot more expensive. Not all of it though. Anyway, this is just a regular cake, but I do have a gluten-free cake mix I’m going to make next. I’ll let you all know how it tastes.If you have any gluten-free recipes, I’d love to have a link to them
. This cake turned out delicious. The icing is cotton candy, but cream cheese would be great! The kids voted for that kind, so I put it on for them. And it is really good.

Blue Velvet Cake is so good. There's two choices of frostings I mentioned.

Ingredients
- 2½ cups cake flour
- 2 sticks butter, at room temperature
- 2 eggs
- 1 tablespoon cocoa powder
- 2 ounces blue food coloring
- 1 teaspoon salt
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- 1 tablespoon vinegar
- Frosting:
- 1 Can Vanilla or Cream Cheese Icing
- 1 Pkg. Cotton Candy Flavoring
- OR
- 1 8-oz. package cream cheese
- 1 Stick of Softened Butter
- 1 cup melted marshmallows
- 1 lb. Confectioners Sugar
- 1 Cup Shredded Coconut (Optional)
- 1 Cup Chopped Pecans (Optional)
Instructions
- Pre-heat oven to 350
- Grease and Flour 2 8" round pans
- In a bowl, bowl, cream the sugar and butter, mix until light and fluffy
- Add the eggs 1 at a time and mix well after each addition.
- Mix cocoa and food coloring together and then add to sugar mixture; mix well.
- Sift together flour and salt.
- Add flour mixture to the creamed mixture alternately with buttermilk.
- Blend in vanilla.
- In a small bowl, combine baking soda and vinegar and add to mixture.
- Pour batter into pans.
- Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from heat and cool completely before frosting.
- Frosting - Homemade Cream Cheese
- Mix cream cheese and butter together in a mixing bowl.
- Add marshmallows and sugar and blend.
- Fold in coconut and nuts.
- Spread between layers and on top and sides of cooled cake.
- ENJOY!
